Creamy Shrimp Noodles Recipe

    2 packets of MAMA Creamy Shrimp Noodles
    1 lb shrimp, peeled and deveined
    1 can (14 oz) coconut milk
    1 red bell pepper, thinly sliced
    1 carrot, julienned
    1 cup snap peas, trimmed
    3 tablespoons fish sauce
    2 tablespoons lime juice
    2 tablespoons vegetable oil
    2 teaspoons red curry paste
    2 teaspoons grated fresh ginger
    2 cloves garlic, minced
    1 stalk lemongrass, bruised and sliced
    Fresh cilantro and lime wedges for garnish

Instructions:
